The pigment in astaxanthin appears as a red, orange, or pink pigment. Various animals, such as flamingos, salmon, trout, shrimp, lobster, and crab, owe their colour to this substance. These animals consume food that contains astaxanthin, such as algae and plankton. In addition to algae and plankton, fungi and some bacteria also produce astaxanthin. Most astaxanthin can be found in the green microalgae Haematococcus pluvialis. This algae is often used as a source in supplements. Astaxanthin is a powerful antioxidant and thus protects the cells against oxidative damage.
